This week, we're cooking Pan Fried Rice with Tofu. Check out the recipe below:
Set for a serving for 4
Ingredients:
- 1/4 Cup & 2 TBSP Soy Sauce
- 2 TBSP Sesame Oil
- 3 Cloves Garlic
- 1-inch Piece of Fresh Ginger, Peeled, Grated and Minced
- 3 Cups Cooked Rice
- 1 Box (16 oz) of Firm Tofu, Drained and Cut into Small Cubes
- 1 Cup Frozen Mixed Vegetables
- 1/4 Cup Scallions, Sliced
- (Optional) Hot Sauce, For Serving
Instructions:
- Preheat oven to 375 degrees F
- Line a baking sheet with parchment paper
- Whisk together the soy sauce, sesame oil, garlic and ginger in a medium bowl, until it is just combined to make the sauce. Set aside.
- Combine the rice, tofu and vegetables in a large bowl.
- Add the sauce to the bowl and gently fold together with a rubber spatula until the rice is fulled coated in the sauce.
- Spread the mixture on the prepared baking sheet and cover it with aluminum foil
- Bake for 10 minutes
- Remove the foil and bake another 12-15 minutes, until the mixture is slightly browned.
- Garnish with scallions and serve with hot sauce, if desired.
