This week, we're cooking Pan Fried Rice with Tofu. Check out the recipe below:

Set for a serving for 4

Ingredients:

  • 1/4 Cup & 2 TBSP Soy Sauce
  • 2 TBSP Sesame Oil
  • 3 Cloves Garlic
  • 1-inch Piece of Fresh Ginger, Peeled, Grated and Minced
  • 3 Cups Cooked Rice
  • 1 Box (16 oz) of Firm Tofu, Drained and Cut into Small Cubes
  • 1 Cup Frozen Mixed Vegetables
  • 1/4 Cup Scallions, Sliced
  • (Optional) Hot Sauce, For Serving

Instructions:

  1. Preheat oven to 375 degrees F
  2. Line a baking sheet with parchment paper
  3. Whisk together the soy sauce, sesame oil, garlic and ginger in a medium bowl, until it is just combined to make the sauce. Set aside.
  4. Combine the rice, tofu and vegetables in a large bowl.
  5. Add the sauce to the bowl and gently fold together with a rubber spatula until the rice is fulled coated in the sauce.
  6. Spread the mixture on the prepared baking sheet and cover it with aluminum foil
  7. Bake for 10 minutes
  8. Remove the foil and bake another 12-15 minutes, until the mixture is slightly browned.
  9. Garnish with scallions and serve with hot sauce, if desired.
