Farro Salad With a Twist - Recipes From Amerant Bank Arena Kitchen

Eat like a Florida Panthers hockey player!

Each week, we'll share a new TRULY Delicious recipe from the Amerant Bank Arena Kitchen, that you can make right at home. This week, it's Farro Salad with a Twist! This stellar salad is a staff favorite with fresh, crisp, green apple chunks and light farro for an excellent source of fiber and protein.

Set for a serving for 4

Ingredients:

  • 1 cup Whole Grain Farro
  • 2 cups Vegetable Broth
  • 1 tsp Salt
  • 1 Bay Leaf
  • 1 Shallot (chopped or sliced thin)
  • 1/3 cup Olive Oil
  • 3 tbsp Apple Cider Vinegar
  • 1 tsp Dijon Mustard
  • 2 tsp Honey
  • Ground Black Pepper
  • 2 cups Arugula
  • 1 Green Apple (chopped)
  • 1/2 cup Shaved Parmesan Cheese (optional)
  • 1/4 cup Chopped Basil
  • 1/8 cup Chopped Parsley
  • 1/4 cup Toasted Pecans or Almonds (chopped)

Instructions:

  1. Combine farro, vegetable broth, salt and bay leaf in a pot and bring to a boil
  2. Reduce and simmer until farro is tender and no broth remains (Approx. 20-30 min.)
  3. Transfer mixture to a bowl to cool
  4. Sautee shallot in a pan until golden brown
  5. To make the dressing: Combine olive oil, vinegar, mustard, and honey. Add salt and pepper to taste.
  6. Combine farro, shallots, apple, basil, parsley, and nuts (and cheese, if wanted) together in a bowl
  7. Toss all with dressing and voila! Enjoy!
